Asparagus Orzo Recipe
Servings: 8
Total Time: 20 minutes
Ingredients:
-
2 cups dry orzo
-
4 cups vegetable broth
-
2 pounds asparagus
-
9 tablespoons butter, divided
-
6 garlic cloves, minced
-
½ cup grated parmesan cheese (extra for garnish)
-
4 tablespoons milk
-
2 tablespoons fresh parsley
-
Salt and pepper to taste
Directions:
-
In a braiser over medium-low heat, melt 1 tablespoon of butter. Add uncooked orzo and stir continuously until pasta is golden brown.
-
Add broth and whisk while bringing it to a boil.
-
Reduce heat to low, cover, and simmer for about 15 minutes or until all the liquid is absorbed. Add the chopped asparagus in the last 2 minutes of cooking. Remove from heat and set aside in a bowl.
-
In the same braiser, melt 8 tablespoons of butter and add minced garlic. Cook for about 4 minutes, stirring constantly to avoid burning.
-
Add orzo and asparagus back to the braiser then stir in cheese, milk, parsley, salt, and pepper. Cook for about 1 minute or until warmed through.
-
Remove from heat and garnish with extra parmesan cheese. Serve and enjoy!
