Butternut Squash Pasta Recipe

  • 16 ounces frozen diced butternut squash

  • 1 ½ cups fresh chopped tomatoes

  • ½ yellow onion

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • ¼ teaspoon black pepper

  • ½ teaspoon dried thyme

  • 1 pound pasta

  • ⅓ cup pasta water


  1. Preheat the oven to 450ºF.

  2. Line a baking sheet with parchment paper. Place frozen cubed butternut squash, chopped tomatoes and sliced onion on the baking sheet. Drizzle olive oil on top and season with salt, pepper, and thyme. Mix to cover the vegetables evenly with oil and seasonings. Bake for 20 minutes.

  3. While the veggies bake, cook the pasta according to package instructions. Before you drain the cooked pasta reserve ⅓ cup of the pasta water and place in a blender.

  4. When the veggies are done, add them to a blender with the pasta water and blend until smooth. Pour the sauce over the cooked pasta and toss to coat.

  5. Garnish with parmesan cheese and serve!
