Corn Fritters Recipe

  • ½ cup all-purpose flour

  • 1 egg

  • ¼ cup water

  • 1 teaspoon baking powder

  • 1 tablespoon olive oil, extra for frying

  • 1 cup corn kernels

  •  1 medium bell pepper, diced

  • ¼ cup chopped parsley

  • ¼ cup chopped chives

  • ½ teaspoon salt

  • ½ teaspoon pepper


  1. Whisk together flour, baking powder, egg, and water in a medium bowl. When the batter is smooth, add olive oil, salt, and pepper, then mix. Add corn, bell pepper, parsley, and chives, then mix and set aside.

  2. Add about 3 to 4 tablespoons of olive oil to your Larder & Vine Skillet over medium heat. Once the oil is hot, add the batter one tablespoon at a time and flatten out each fritter.

  3. Cook for about 3 to 4 minutes per side, or until golden brown.

  4. Serve with sour cream and fresh parsley and enjoy.
