Whisk together flour, baking powder, egg, and water in a medium bowl. When the batter is smooth, add olive oil, salt, and pepper, then mix. Add corn, bell pepper, parsley, and chives, then mix and set aside.
Add about 3 to 4 tablespoons of olive oil to your Larder & Vine Skillet over medium heat. Once the oil is hot, add the batter one tablespoon at a time and flatten out each fritter.
Cook for about 3 to 4 minutes per side, or until golden brown.
Serve with sour cream and fresh parsley and enjoy.
