Corn Fritters Recipe

Ingredients:

½ cup all-purpose flour

1 egg

¼ cup water

1 teaspoon baking powder

1 tablespoon olive oil, extra for frying

1 cup corn kernels

1 medium bell pepper, diced

¼ cup chopped parsley

¼ cup chopped chives

½ teaspoon salt

½ teaspoon pepper
Directions:

Whisk together flour, baking powder, egg, and water in a medium bowl. When the batter is smooth, add olive oil, salt, and pepper, then mix. Add corn, bell pepper, parsley, and chives, then mix and set aside.

Add about 3 to 4 tablespoons of olive oil to a skillet over medium heat. Once the oil is hot, add the batter one tablespoon at a time and flatten out each fritter.

Cook for about 3 to 4 minutes per side, or until golden brown.
