Creamy Mushroom Soup
One Pot Meal for One

Ingredients:

8 oz baby bella mushrooms, sliced

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup chopped onion

⅓ teaspoon dried thyme

⅓ teaspoon oregano

1 ⅓ cups chicken broth

⅓ cup heavy cream
-
Salt and pepper to taste
Directions:

In a saucepan, melt butter over medium heat. Add onion and sauté until softened, about 3 to 4 minutes.

Add mushrooms, thyme, and oregano. Sauté for about 10 to 15 minutes or until mushrooms have softened.

Add flour making sure to coat the mushrooms and continue cooking for another 2 minutes.

Mix in chicken broth and bring to a simmer over medium heat for another 10 to 15 minutes.

Reduce heat to low and stir in heavy cream. Remove from heat and season with salt and pepper and enjoy!
