Creamy Spinach Eggs Recipe

Ingredients:
- 2 tablespoons extra-virgin olive oil
- ½ cup finely chopped onion
- Salt and pepper to taste
- 4 cups sliced spinach
- 1 cup heavy cream
- ½ teaspoon nutmeg
- 4 tablespoons parmesan cheese
- 4 large eggs
Directions:

Preheat oven to 350ºF.

In a large ovenproof skillet, heat olive oil over medium-high heat. Add onion and a pinch of salt. Cook until translucent, then add spinach until wilted. Add the cream and bring to a simmer. Add the nutmeg and parmesan, then season with salt and pepper.

Make 4 indents into the spinach mixture and crack an egg into each space.

Transfer the skillet to the oven and cook for about 8 minutes, until the egg whites are set and yolks are still runny.
