Fried Rice Recipe

2 tbsp vegetable oil
½ cup finely chopped onion
1 cup finely chopped fresh or frozen veggies
2 cups cooked rice
1 large egg
Ground black pepper
Fresh cilantro leaves for garnish
1. Heat the oil in a skillet over medium heat. Add the onion and sauté until it turns translucent, about 3-4 minutes. Add the veggies and cook for 3 to 4 minutes. Season with 1 tsp soy sauce.
2. Add your cooked rice and stir to combine, adding a little more oil if the rice sticks to the pan. Add another dash of soy sauce. In a small bowl, beat the egg with a fork to break up the yolk, then gradually pour the egg into the skillet, stirring to scramble the egg and blend it into the rice. Season again with soy sauce and a few grinds of black pepper. Garnish with cilantro, and serve.
* Recipe can be made gluten-free by substituting for a gluten-free soy sauce.
