A summertime classic side dish. If you're a zucchini lover, you know there are endless ways to enjoy this vegetable. Some of the more fun ones may be a little more tedious such as zucchini lasagna, but you can never go wrong with a simple sautéed zucchini. Follow along below to prepare one of the best marinades for all your veggie dishes.
Ingredients
- 4 medium zucchini, diced
- 4 garlic cloves, minced
- 2 teaspoons oregano
- 1 tablespoon smoked paprika
- 2 teaspoons cumin powder
- ¼ cup chicken broth
- ¼ cup lemon juice
- ½ teaspoon onion powder
- ½ teaspoon chili flakes, optional
- ¼ cup olive oil
- 1 tablespoon unsalted butter
- Salt and pepper to taste

In a bowl, combine paprika, cumin, chicken broth, lemon juice, onion powder, oregano, garlic, chili flakes, and olive oil.

Toss the diced zucchini in the marinade and let sit for 15 to 30 minutes. Drain zucchini from the marinade and keep the drained marinade for later.

Heat 1 tablespoon butter in your Larder & Vine Skillet over medium-low heat and add the diced zucchini. Season with salt, and pepper, and add a bit of oil if necessary. Sauté zucchini for 2 to 3 minutes over medium-low.

Add the drained marinade over the zucchini. Cook zucchini with the marinade for 3 to 4 minutes, stirring from time to time, until the sauce has reduced and the zucchini is tender.
