Pumpkin Alfredo Recipe

Ingredients:

1 lb pasta

3 tablespoons butter

1 tablespoon minced garlic

1 cup pumpkin puree

1 cup chicken or vegetable broth

1 cup heavy cream

¾ cup shredded parmesan cheese

1 teaspoon salt

⅛ teaspoon ground nutmeg
Directions:

Cook pasta according to directions then drain and set aside.

In a Dutch oven, melt butter over medium heat. Add garlic and sauté until fragrant for about a minute.

Add pumpkin puree and broth and stir continuously until smooth.

Stir in heavy cream, parmesan cheese, salt, and nutmeg. Continue to simmer for about 2 to 4 minutes until smooth. Season with pepper and remove from heat.

Add cooked pasta to the Dutch oven and mix until well combined. Serve with extra parmesan and enjoy!
