  • 2 teaspoons lemon zest

  • 2 tablespoons lemon juice

  • 4 pounds fresh peaches

  • 3 tablespoons packed brown sugar

  • ½ teaspoon almond extract

  • ½ teaspoon salt

  • 3 tablespoons cornstarch

  • 1¼ cup all-purpose flour

  • 1¼ teaspoon baking powder

  • ¾ teaspoon salt

  • 10 tablespoons unsalted butter, melted then kept at room temperature

  • 6 tablespoons packed brown sugar

  • 3 tablespoons granulated sugar

  • 1 teaspoon vanilla extract

Recipe Directions

  1. Preheat the oven to 350ºF and coat your  Larder & Vine Dutch Oven  with butter.
  2. Put the lemon juice and zest into a large bowl.
  3. Peel the peaches, remove the pit, and cut into ¼-inch slices. Add the peaches to the bowl with the lemon juice and zest. Make sure to toss the peaches in the lemon juice to keep them from browning.
  4. Into the same bowl as the peaches, add brown sugar, almond extract, salt, and cornstarch, then toss until well combined.
  5. Pour the filling into the Dutch oven and smooth it into an even layer then bake for 15 minutes.
  6. While the filling bakes, add flour, baking powder, and salt to a bowl and mix until well combined. Add the butter, brown sugar, granulated sugar, and vanilla extract and stir until well combined. It should turn into a soft crumbly dough.
  7. When the filling is done baking, remove it from the oven and sprinkle the topping mixture over the filling evenly. Place back in the oven and bake for about 45 to 55 minutes or until the top is golden brown.
  8. Remove from the oven and let cool, then serve with vanilla ice cream and enjoy!
