Recipe Ingredients
1 cup uncooked orzo
½ cup crumbled feta
¼ cup red onion, chopped
10 oz grape tomatoes, halved
1 cucumber, seeded and chopped
¼ cup chopped olives
¼ teaspoon dried oregano
2 tablespoons red wine vinegar
2 tablespoons olive oil
Salt & pepper to taste
Fresh parsley chopped
Recipe Directions
1. Fill your Dutch oven with water and bring to a boil. Cook orzo until al dente. Strain and rinse with cold water to chill.
2. Prep your other ingredients according to the ingredient list above.
3. Once the orzo has cooled, add to your serving bowl. Add the rest of the ingredients and toss. Add more oil or vinegar if needed, then garnish with fresh parsley. Serve or keep in the fridge until ready to serve.
