Recipe Ingredients

  • 2 ¼ cups all purpose flour
  • 1 cup sugar
  • 3 teaspoons baking powder
  • ⅛ teaspoon salt
  • ½ cup vegetable oil
  • 1 egg + 1 egg yolk

  • 1 cup milk
  • ¼ cup yogurt
  • 1 orange, zested
  • 1 lemon, zested
  • ½ cup candied orange pieces (optional)

Glaze Ingredients

  • 1 egg white

  • 3 tablespoons almond flour

  • 3 tablespoons powdered sugar + extra for sprinkling

  • 3 tablespoons water

  • Almonds, for topping

Recipe Directions

1. Preheat your oven to 350°F. Grease muffin tin and set aside.


2. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Stir until well combined.


3. In another bowl, whisk together vegetable oil, egg, egg yolk, milk, yogurt, orange zest, and lemon zest.


4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. If using, fold in the candied orange pieces gently into the batter.


5. Divide the batter evenly among the muffin tins, filling each space about ⅔ full. Bake in the preheated oven for 15 minutes.


6. While the muffins are baking, prepare the glaze. In a small bowl, mix together the egg white, almond flour, powdered sugar, and water until smooth.


7. Once the muffins are done baking, remove them from the oven and let them cool slightly in the pan for a few minutes.


8. Carefully remove the muffins from the tin and place them on a wire rack.


9. Using a pastry brush or spoon, generously coat the tops of the muffins with the glaze mixture.


10. Return the muffins to the oven and bake for an additional 15 minutes, or until the glaze is set and the muffins are golden brown.


11. Sprinkle additional powdered sugar over the glazed muffins for an extra sweet touch.


12. Allow the muffins to cool completely on the wire rack before serving.
