In a blender or food processor, pulse the graham crackers until they turn into fine crumbs. Add the melted butter and sugar, then pulse a few more times until the mixture is evenly combined and resembles wet sand.
Press the graham cracker mixture firmly into your Larder & Vine 8 x 8 square cake pan, spreading it evenly along the bottom. Bake at 350ºF for 8 minutes to help the crust set before adding the filling.
In a mixing bowl, whisk together the eggs, sweetened condensed milk, vanilla extract, and key lime juice and zest until the mixture becomes thick and well combined.
Pour the filling over the baked crust and return the pan to the oven. Bake for 15 minutes at 350ºF, or until the edges are set but the center is still slightly jiggly when gently shaken. It will continue to firm up as it cools.
