Recipe Ingredients

  • 2 tablespoons butter
  • 1 garlic clove, minced
  • 2 pounds asparagus, ends trimmed, cut into 1-inch pieces
  • Kosher salt

  • Freshly ground black pepper
  • 2 cups chicken broth
  • ½ cup heavy cream, more for garnish
  • Freshly chopped chives
  • Freshly chopped dill

Recipe Directions



1. Cook the Asparagus

In a Dutch Oven over medium heat, melt the butter. Add the garlic and cook for about 1 minute, or until fragrant. Add the asparagus, season with salt and pepper, and cook for about 5 minutes, or until golden. Pour in the broth, cover, and let simmer until the asparagus is very tender yet still bright green—about 10 minutes.




2. Blend the Soup

Use an immersion blender to puree the soup until smooth. If using a regular blender, blend in batches and pause occasionally to remove the lid to prevent overheating. Return the blended soup to the Dutch Oven, stir in the cream, and warm over low heat. Season with additional salt and pepper to taste.




3. Garnish and Serve

Ladle the soup into bowls and garnish with a drizzle of cream and a sprinkle of fresh herbs. Serve warm and enjoy!
