Recipe Ingredients

  • 1 Tablespoon Olive Oil
  • 1 Small Red Onion, Finely Chopped
  • 1 Garlic Clove, Minced
  • 1¼ Pounds Cherry Tomatoes

  • ½ Teaspoon Salt
  • ¼ Teaspoon Black Pepper
  • ½ Pound Penne
  • 4 Tablespoons Grated Parmesan Cheese
  • 6 Fresh Basil Leaves, Thinly Sliced

Directions:


1. Make the Sauce


Heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until softened—about 5 minutes. Add the garlic and cook, stirring constantly, for about 30 seconds, or until fragrant.


Stir in the tomatoes, salt, and pepper. Cook, stirring occasionally, until the tomatoes collapse and the sauce thickens—about 10 minutes. Transfer the sauce to a medium bowl and keep warm. Wash out the saucepan before cooking the pasta.




2. Cook the Pasta

In the same saucepan, cook the penne according to package directions until al dente. Drain and return the pasta to the saucepan.




3. Combine and Serve

Add the tomato sauce, 2 tablespoons of Parmesan cheese, and the basil to the pasta. Toss until everything is evenly coated. Serve warm, sprinkled with the remaining Parmesan cheese.

Recipe Notes


Storage: Store recipe leftovers in an airtight container in the fridge for up to 4 or 5 days. If you plan to freeze the soup, allow it to cool completely before adding it to a freezer-safe container.


Reheating: You can reheat the soup on the stove or in the microwave. If you freeze the soup altogether, allow soup to thaw overnight in the fridge before reheating.
