Blueberry Cobbler Recipe

- ½ cup butter

- 1 cup all-purpose flour

- 1 cup granulated sugar

- 1½ teaspoons baking powder

- ½ teaspoon salt

- ½ teaspoon ground cinnamon

- 1 lemon, zest and juice

- 2 teaspoons vanilla extract

- 1 cup whole milk

- 1¾ cups fresh blueberries

- ¼ cup granulated sugar for sprinkling on top



1. Adjust oven rack to the middle position. Preheat oven to 350°F.

2. As the butter is melting, take out a medium mixing bowl. Add the flour, 1 cup of granulated sugar, baking powder, salt, cinnamon, and lemon zest to the bowl. Whisk until combined. Add the milk, vanilla, and lemon juice to the bowl. Whisk until the mixture is smooth.

3. Briefly swirl the skillet to butter the sides of the pan. Pour the batter into the skillet, directly on top of the melted butter. Add the blueberries to the skillet, evenly scattering them on top of the batter. Sprinkle the surface with the remaining granulated sugar. If desired, reserve one tablespoon of the sugar to sprinkle on top of the finished baked cobbler, giving it added sparkle and texture.

4. Bake the berry cobbler for 30 minutes or until the topping is a beautiful golden brown and the blueberries are bubbly. Remove cobbler from the oven. Allow it to cool for 10 minutes.

5. Serve blueberry cobbler directly from the skillet! Top each serving with a rounded scoop of vanilla ice cream!
