Recipe Ingredients

  • 2 cups dry orzo

  • 4 cups vegetable broth

  • 2 pounds asparagus

  • 9 tablespoons butter, divided

  • 4 cloves garlic, minced

  • ½ cup grated parmesan cheese, extra for garnish

  • 4 tablespoons milk

  • 2 tablespoons fresh parsley, chopped

  • Salt and pepper to taste

Recipe Directions

1. Toast the Orzo

In your Larder & Vine Braiser over medium-low heat, melt 1 tablespoon of butter. Add the uncooked orzo and stir continuously until the pasta turns golden brown and fragrant.

2. Add the Broth

Pour in the broth and whisk while bringing the mixture to a boil.

3. Simmer and Cook the Asparagus

Reduce the heat to low, cover, and let the orzo simmer for about 15 minutes, or until all the liquid is absorbed. Add the chopped asparagus during the last 2 minutes of cooking. Once done, remove from heat and transfer the orzo mixture to a bowl.

4. Prepare the Garlic Butter

In the same Braiser, melt 8 tablespoons of butter over medium heat. Add the minced garlic and cook for about 4 minutes, stirring constantly to prevent burning.

5. Combine and Warm Through

Return the orzo and asparagus to the Braiser. Stir in the cheese, milk, parsley, salt, and pepper. Cook for about 1 minute, just until everything is warmed through and creamy.

6. Garnish and Serve

Remove from heat and garnish with extra Parmesan cheese. Serve warm and enjoy your rich, buttery garlic orzo with asparagus!
