Recipe Ingredients

  • 1 large baguette, sliced

  • ¼ cup unsalted butter

  • 3 pounds sweet onions, sliced

  • 3 cloves garlic, minced

  • ⅓ cup dry white wine

  • 6 cups beef broth

  • 4 sprigs fresh thyme

  • 2 bay leaves

  • 2 teaspoon balsamic vinegar

  • Salt and pepper to taste

  • 1½ cups shredded Gruyère cheese

  • ½ cup grated Parmesan cheese

Recipe Directions



1. Broil the Baguette Slices

Set oven to broil.
Add baguette slices to a baking sheet and broil until golden, about 2 minutes on each side.




2. Caramelize the Onions

In your Larder & Vine Dutch Oven over medium heat, melt butter and sauté onions for about 30 to 40 minutes. Stir often until caramelized.




3. Add Garlic and Deglaze

Add in garlic and cook until fragrant, about 1 minute. Stir in wine and scrape the bottom of your Dutch Oven.




4. Build the Broth

Add beef broth, thyme, and bay leaves, then bring to a boil. Reduce heat and let simmer, stirring occasionally until reduced, about 15 to 20 minutes. Remove thyme sprigs and bay leaves.




5. Season the Soup

Stir in balsamic vinegar and season with salt and pepper to taste.




6. Top with Bread and Cheese

Evenly place the baguette slices on top and sprinkle cheese over to cover the baguette slices.




7. Broil and Serve

Broil in the oven for about 3 to 5 minutes, or until golden brown on top. Serve immediately and enjoy!
