Recipe Ingredients

  • 2 to 3 tablespoons olive oil

  • 4 chicken thighs with skin on

  • Salt and pepper to taste

  • Greek seasoning to taste

  • 1 large onion, diced

  • 1 cup white rice

  • 1 tablespoon minced garlic

  • 1 teaspoon dried oregano

  • Zest of 2 lemons

  • Juice of 2 lemons

  • 2 cups chicken stock

  • Fresh parsley for garnish

Recipe Directions



1. Preheat the Oven

Preheat the oven to 350ºF.




2. Season the Chicken

Season the chicken with salt, pepper, and Greek seasoning to your preference.




3. Brown the Chicken

Add 1 tablespoon of oil to your Larder & Vine Braiser and heat over medium-high heat. Add the chicken and brown on both sides for about 3 to 5 minutes per side. Once browned, remove the chicken from the Braiser and set aside.




4. Sauté the Aromatics

Add the remaining olive oil to the empty Braiser and keep it over medium-high heat. Add the onions and cook for 3 to 5 minutes, until softened. Stir in the lemon zest and garlic, cooking for about 30 seconds or until fragrant.




5. Toast the Rice

Add the uncooked rice to the Braiser and toast for about 1 minute, stirring frequently to coat it evenly in the oil and aromatics.




6. Add the Liquid and Seasonings

Pour in the chicken stock and lemon juice, then stir in the oregano. Mix everything together until well combined.




7. Bake the Dish

Place the browned chicken back into the Braiser, skin side up. Cover with the lid and transfer the Braiser to the oven. Bake for 40 to 50 minutes, or until the rice is tender and the chicken is fully cooked through.




8. Serve and Enjoy

Remove from the oven and let it rest for a few minutes before serving. Enjoy your flavorful lemon chicken and rice straight from the Braiser!
