Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ tsp salt
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon ground nutmeg

  • ½ cup whole milk
  • 2 tablespoons unsalted butter, melted and cooled
  • ½ teaspoon vanilla extract
  • 2 quarts peanut or vegetable oil
  • Confectioners sugar for dusting

Directions:


1. Make the Batter

In a medium bowl, whisk together the flour, baking powder, and salt. In a separate bowl, whisk the granulated sugar, eggs, and nutmeg until smooth, then whisk in the milk, melted butter, and vanilla. Stir the wet ingredients into the flour mixture using a wooden spoon until the batter is evenly combined.


2. Fry the Doughnuts

Add oil to your Dutch oven until it’s about ½ inch deep. Heat over medium-high until the oil reaches 350ºF. Line a rimmed baking sheet with paper towels. Using a small ice cream scoop or two large spoons, carefully drop six golf ball-sized portions of batter into the hot oil. Fry until the doughnuts are crisp and deeply golden on all sides, 3 to 6 minutes. Adjust the heat as needed to maintain an oil temperature between 325ºF and 350ºF.


3. Drain and Serve

Using a wire skimmer or slotted spoon, transfer the fried doughnuts to the prepared baking sheet to drain. Repeat with the remaining batter in three batches. Dust with confectioners’ sugar and serve warm for the best flavor and texture.
