  • 2 tablespoons olive oil
  • ½ onion, finely diced
  • 1 cup white mushrooms, sliced
  • ½ cup zucchini, diced
  • 1 large carrot, diced
  • 2 cups cooked lentils
  • 1 cup raw walnuts, optional

  • ½ cup tomato sauce
  • ½ cup unsweetened plain almond milk
  • ½ teaspoon taco seasoning
  • 3 tablespoons coconut aminos
  • 2 cups shredded cheddar cheese
  • 24 ounces frozen tater tots

Recipe Directions



1. Preheat the Oven

Preheat the oven to 425º Fahrenheit.




2. Sauté the Vegetables

Heat the olive oil in your braiser over medium heat. Add the onions, mushrooms, zucchini, and carrots, and sauté for about 5 minutes, or until the vegetables begin to soften.




3. Blend the Lentil Mixture

Carefully transfer the cooked vegetables to a food processor. Add the cooked lentils, walnuts (if using), tomato sauce, almond milk, coconut aminos, and taco seasoning. Process until smooth and well combined. Transfer the lentil mixture back into the braiser.




4. Add the Cheese

Sprinkle cheese evenly over the lentil mixture, ensuring it is fully covered.




5. Arrange the Tater Tots

Place the tater tots on top of the cheese in concentric circles, covering the entire surface.




6. Bake and Serve

Carefully transfer the braiser to the oven and bake uncovered for 15 to 20 minutes, or until the cheese is melted and the tater tots are golden and crispy. Remove from the oven, let cool slightly, and serve warm!
