Recipe Ingredients

  • 2 lbs boneless skinless chicken breasts

  • ¼ cup all-purpose flour

  • ¼ cup chopped cilantro

  • 2 tablespoons coconut oil

  • 2 clove garlic, minced

  • 1 cup coconut milk

  • ⅔ cup chicken broth

  • 1 tablespoon brown sugar

  • 2 limes, quartered

  • 1 green onion, chopped for garnish

  • Salt and pepper to taste

Recipe Directions



1. Preheat the Oven

Preheat to 375 °F.




2. Heat Oils & Dredge Chicken

Heat coconut oil (and olive oil, if used) in an ovenproof braiser over medium heat. Meanwhile, mix flour + cilantro in a shallow bowl, then dredge the chicken breasts in that mixture.




3. Sear the Chicken

Sear each chicken breast for about 3–4 minutes per side until browned. Add minced garlic and cook for about 30 seconds until fragrant.




4. Mix Coconut-Lime Sauce

Meanwhile, in a bowl, whisk together coconut milk, chicken broth, brown sugar, and juice from one lime.




5. Bake Chicken in Sauce

Remove the braiser from heat, pour the coconut-lime sauce over the chicken, then transfer to oven. Bake ~10–15 minutes, until chicken reaches 165 °F internally.




6. Finish with Lime & Garnishes

Remove from oven, drizzle with juice from the remaining lime, and garnish with chopped cilantro, green onion, salt, and pepper.




7. Serve Over Rice

Serve over coconut-lime rice or your choice of side to absorb the sauce.
