Recipe Ingredients

  • 2 lbs boneless skinless chicken breasts

  • ¼ cup all-purpose flour

  • ¼ cup chopped cilantro

  • 2 tablespoons coconut oil

  • 2 clove garlic, minced

  • 1 cup coconut milk

  • ⅔ cup chicken broth

  • 1 tablespoon brown sugar

  • 2 limes, quartered

  • 1 green onion, chopped for garnish

  • Salt and pepper to taste

Recipe Directions

Preheat oven to 375ºF.


Heat the coconut oil and olive oil in your ovenproof Braiser over medium heat.


In a shallow bowl, mix together the flour and cilantro. Dredge each chicken breast in the mixture and coat evenly. Sear on each side in the Braiser for about 3 to 4 minutes per side. Add the minced garlic and cook for about 30 seconds or until fragrant.


While the chicken is searing, mix the coconut milk, broth, brown sugar, and juice from 1 lime in a medium bowl.


Once the chicken is seared on both sides, remove the Braiser from the heat. Pour the coconut milk mixture over the chicken and place into the oven to bake for about 10 to 15 minutes, or until the chicken reaches an internal temperature of 165°F.


Remove the Braiser from the oven, and drizzle lime juice on top. Garnish with salt, pepper, chopped cilantro, and chopped green onions. Serve with cilantro lime rice and enjoy!
