Recipe Ingredients

  • 1 tablespoon olive oil

  •  ½ lb pancetta, diced

  • 2 garlic cloves, minced

  • 3 eggs

  • 1 cup grated parmesan cheese, divided

  • 16 oz spaghetti

  • Salt & pepper to taste

Recipe Directions



1. Boil the Water

In your Larder & Vine Dutch Oven, bring salted water to a boil.




2. Cook the Pancetta

In your Larder & Vine Braiser, heat the olive oil or butter over medium heat. Add the pancetta and cook until it becomes crispy and golden brown.




3. Add the Garlic

Add the garlic to the Braiser and cook for about 1 minute, or until fragrant. Turn off the heat and set the Braiser aside to cool slightly.




4. Prepare the Egg Mixture

In a mixing bowl, whisk together the eggs and ½ cup of Parmesan cheese until smooth. Set aside.




5. Cook the Pasta

Once the water in the Dutch Oven is boiling, add the pasta and cook until al dente. Before draining, reserve about 1 cup of the pasta water, then drain the pasta.




6. Combine the Pasta and Pancetta

Transfer the hot pasta to the Braiser with the pancetta and garlic. Toss to combine, allowing the heat from the pasta to release the flavors.




7. Make the Sauce

Pour the egg and cheese mixture over the pasta, tossing quickly to combine. Gradually add a little of the reserved pasta water, stirring constantly until a creamy sauce forms and coats the pasta.




8. Season and Serve

Season with salt and pepper to taste, then top with the remaining Parmesan cheese. Serve immediately and enjoy your rich, creamy carbonara!
