1 tablespoon olive oil
½ lb pancetta, diced
2 garlic cloves, minced
1 cup grated parmesan cheese, divided
16 oz spaghetti
Salt & pepper to taste
In your Larder & Vine Dutch Oven, bring salted water to a boil.
In your Larder & Vine Braiser, heat the olive oil or butter on medium heat. Add the pancetta and cook until crispy.
Add the garlic and cook for about a minute, or until fragrant. Turn off the heat and move the Braiser to cool.
In a mixing bowl, Mix the eggs and ½ cup of parmesan cheese.
Once the water has started to boil, add the pasta, and cook until al dente. Reserve about 1 cup of pasta water.
Once the pasta is done, transfer pasta to the Braiser with the pancetta and garlic. Be sure to move the pasta while hot.
