Recipe Ingredients
1 tablespoon olive oil
½ lb pancetta, diced
2 garlic cloves, minced
3 eggs
1 cup grated parmesan cheese, divided
16 oz spaghetti
Salt & pepper to taste
Recipe Directions
1. In your Larder & Vine Dutch Oven, bring salted water to a boil.
2. In your Larder & Vine Braiser, heat the olive oil or butter on medium heat. Add the pancetta and cook until crispy.
3. Add the garlic and cook for about a minute, or until fragrant. Turn off the heat and move the Braiser to cool.
4. In a mixing bowl, Mix the eggs and ½ cup of parmesan cheese.
5. Once the water has started to boil, add the pasta, and cook until al dente. Reserve about 1 cup of pasta water.
6. Once the pasta is done, transfer pasta to the Braiser with the pancetta and garlic. Be sure to move the pasta while hot.
7. Add the egg and cheese mixture and toss to mix until well combined and you get a creamy sauce.
8. Add salt and pepper to taste then top with the remaining parmesan cheese and enjoy!
