Sweet, spicy, and perfectly caramelized — Chef Joe Sasto's vibrant twist on a humble root vegetable.
These Honey-Roasted Radishes transform crisp, peppery radishes into something entirely new. Tossed with olive oil, honey, chiles, and thyme, they roast into tender, golden bites with a delicate balance of heat and sweetness. A quick trip in a hot oven gives them irresistibly caramelized edges while keeping just enough bite inside.
Finished with a sprinkle of fresh parsley, this simple side dish is as beautiful as it is flavorful — the perfect companion to roasted meats, grilled fish, or your favorite springtime spread.

Ingredients
- 2 cups radishes, trimmed and halves
- 1 tbsp olive oil
- 1 tbsp chile paste
- 1 tsp honey
- 1/2 tsp fresh thyme leaves (or 1/4 tsp dried thyme)
- Salt and pepper, to taste

Directions
1. Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Prepare the Radishes
In a large bowl, toss the halved radishes with olive oil, chiles, honey, thyme, salt,
and pepper until well coated.
3. Roast the Radishes
Spread the radishes in a single layer on the prepared baking sheet, cut side down. Roast for 15-18 minutes, until tender and caramelized, flipping halfway through for even roasting.
4. Finish & Serve
Once done, remove the radishes from the oven and transfer to a serving dish. Optionally, sprinkle with fresh parsley.
