Recipe Ingredients

  • 4 cups pitted cherries
  • ¼ cup water
  • 1 ½ tablespoons cornstarch

  • ⅓ cup sugar
  • 2 teaspoons lemon juice

Topping Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 10 tablespoons cold butter, cubed

  • ½ cup heavy cream
  • 2 tablespoons melted butter
  • ¼ cup sugar

Recipe Directions

1. Preheat Oven & Butter Skillet

Preheat the oven to 375 °F and butter (or grease) your cast-iron (or oven-safe) skillet.

2. Make the Cherry Filling

In a saucepan, mix cherries, sugar, water, and cornstarch slurry. Cook over medium heat until the mixture thickens, then stir in lemon juice. Cover and set aside.

3. Prepare the Cobbler Topping Dough

In a large bowl, whisk together flour, baking powder, and salt. Add cubed cold butter and cut or work into the dry mixture until crumbs form. Then stir in heavy cream to form a soft, wet dough.

4. Assemble Skillet (Fruit + Topping)

Pour the cherry filling into your buttered skillet. Using floured hands, form pieces of the dough (4-5 thin patties) and place them over the cherry layer. Brush the tops with melted butter and sprinkle with sugar.

5. Bake Until Golden & Bubbly

Bake about 30 minutes, or until the cobbler topping is golden brown and the cherry filling is bubbling.

6. Serve Warm

Let cool slightly, then serve warm (often with ice cream).
