5 cups sliced strawberries
⅔ cup sugar
2 teaspoons lemon juice
2 tablespoons all-purpose flour
½ teaspoon vanilla extract
1 ½ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
10 tablespoons cold butter, cubed
½ cup heavy cream
2 tablespoons butter, melted
¼ cup sugar
Preheat the oven to 375ºF & butter your skillet.
In a large bowl, mix together all the filling ingredients. Once well combined, add to your skillet.
In a separate bowl, whisk together all-purpose flour, baking powder, and salt.
Add flour mixture and cold butter cubes to a food processor or blender. Pulse until small crumbs start to form. Add heavy cream and continue to pulse until a soft dough forms.
Cover your hands in flour and gently mold handfuls of the dough into about 4 to 5 thin patties and lay evenly on top of the strawberry filling.
Lightly brush the tops of the cobbler dough with melted butter then sprinkle sugar on top.
Bake for about 30 minutes or until golden brown and bubbly. Serve each scoop with vanilla ice cream and enjoy!
