5 cups sliced strawberries
⅔ cup sugar
2 teaspoons lemon juice
2 tablespoons all-purpose flour
½ teaspoon vanilla extract
Dash of salt
1 ½ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
10 tablespoons cold butter, cubed
½ cup heavy cream
2 tablespoons butter, melted
¼ cup sugar
Preheat the oven to 375ºF and butter your skillet to prevent sticking.
In a large mixing bowl, combine all of the filling ingredients. Stir until everything is evenly coated, then pour the mixture into your prepared skillet.
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
Add the flour mixture and cold butter cubes to a food processor or blender. Pulse until small crumbs begin to form. Add the heavy cream and continue pulsing until a soft dough comes together.
Lightly flour your hands and shape the dough into 4 to 5 thin patties. Gently place them evenly over the strawberry filling in the skillet.
Brush the tops of the dough with melted butter and sprinkle a little sugar over each patty for a golden, crisp finish.
Bake for about 30 minutes, or until the cobbler is golden brown and bubbly around the edges. Serve warm with a scoop of vanilla ice cream and enjoy your homemade strawberry skillet cobbler!
