Potato Pepper Frittata Recipe

Ingredients:

  • 1 bell pepper, sliced

  • 6 large eggs

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  • ¼ cup minced shallots

  • 1 medium Yukon gold potato, diced

  • ½ teaspoon garlic powder

  • ¼ teaspoon paprika

 

Directions:

  1. Preheat the oven to 400°F.

  2. In a large bowl, add eggs, salt, and pepper, then whisk until smooth.

  3. In an ovenproof skillet over medium heat, add olive oil and shallots and sauté until golden, about 2 to 3 minutes.

  4. Add diced potatoes, salt, garlic powder, paprika and black pepper. Cover and cook over medium-low heat, stirring occasionally, until crisp and tender, about 12 to 15 minutes.

  5. Pour the eggs over the potatoes and added sliced peppers. Reduce the heat to low and cook until the edges are set, about 6 to 8 minutes.

  6. Transfer the skillet to the oven and bake for 8 to 10 minutes or until fully cooked through.

  7. Remove from the oven, serve, and enjoy!
