Recipe Ingredients

  • 2 to 3 large zucchini, chopped

  • 2 tablespoons olive oil

  • 16 oz cherry tomatoes

  • 3 cloves garlic, minced

  • ¼ cup shredded parmesan cheese

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon dried coriander

  • Salt & pepper to taste

  • ¼ cup chopped fresh parsley

Recipe Directions



1. Preheat the Oven

Preheat the oven to 350ºF.




2. Prepare the Vegetables

In a large mixing bowl, combine the zucchini, tomatoes, olive oil, garlic, Parmesan cheese, oregano, thyme, coriander, salt, and pepper. Mix well until all of the vegetables are evenly coated.




3. Bake the Vegetables

Transfer the seasoned vegetables to your Braiser and spread them out evenly. Bake in the oven for 20 to 25 minutes, or until the vegetables are tender and lightly golden.




4. Garnish and Serve

Remove from the oven, garnish with fresh parsley and an extra sprinkle of Parmesan cheese, then serve and enjoy!
