Braiser Baked Summer Veggies Recipe

Recipe Ingredients

  • 2 to 3 large zucchini, chopped

  • 2 tablespoons olive oil

  • 16 oz cherry tomatoes

  • 3 cloves garlic, minced

  • ¼ cup shredded parmesan cheese

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon dried coriander

  • Salt & pepper to taste

  • ¼ cup chopped fresh parsley

Recipe Directions

Preheat oven to 350ºF.

In a large mixing bowl, add zucchini, tomatoes, olive oil, garlic, parmesan cheese, oregano, thyme, coriander, salt and pepper. Mix until all veggies are coated.

Add veggies to your Braiser and bake in the oven for 20 to 25 minutes.

Remove from oven, garnish with parsley and extra parmesan, serve and enjoy!
