Recipe Ingredients

  • 1 lb large sea scallops

  • 1 tablespoon olive oil

  • 4 tablespoons unsalted butter, melted

  • 2 tablespoons dry white wine

  • 1 tablespoon fresh lemon juice

  • 1 cup grated parmesan cheese, divided

  • 1 teaspoon salt

  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • ⅛ teaspoon cayenne pepper
  • ¼ teaspoon paprika
  • 2 tablespoons chopped fresh parsley

Recipe Directions

1. Preheat the Oven

Preheat the oven to 350ºF.

2. Prepare the Scallops

Rinse the scallops under cool water and pat them completely dry with paper towels. Evenly spread olive oil along the interior of your Larder & Vine Braiser to prevent sticking. Arrange the scallops in a single, even layer inside the Braiser.

3. Make the Sauce

In a small bowl, whisk together the melted butter, wine, lemon juice, ½ cup of Parmesan cheese, salt, pepper, garlic powder, dried parsley, and cayenne pepper. Let the mixture rest for a few minutes to thicken slightly. Once thickened, drizzle the sauce evenly over the scallops.

4. Bake the Scallops

Cover the Braiser with its lid and bake for 20 to 25 minutes, or until the scallops are fully cooked through and reach an internal temperature of about 115ºF.

5. Broil for a Golden Top

Remove the Braiser from the oven and uncover it. Switch the oven setting to broil. Sprinkle the remaining ½ cup of Parmesan cheese and a pinch of paprika over the scallops. Broil for 2 to 3 minutes, or until the tops are golden and crisp.

6. Garnish and Serve

Remove from the oven, garnish with freshly chopped parsley, and serve immediately. Enjoy your buttery, golden-baked scallops!
