Bring a large pot of water to a boil and cook the pasta according to the package directions. Remove the pasta when it’s al dente—tender but still slightly firm to the bite. Drain and set aside.
While the noodles cook, blend the milk and cottage cheese together until smooth and creamy. Set aside.
Once the pot is empty, reduce the heat to medium and melt the butter. Pour in the blended cottage cheese mixture, then add the seasonings and grated cheese. Stir and cook until the cheese is fully melted and the sauce is smooth.
Add the cooked pasta to the cheese sauce and stir until evenly coated. Gently fold in the tuna and mix well.
Lightly oil an 8 x 8 baking pan and pour in the mac and cheese mixture. Spread it evenly, then top with panko breadcrumbs. Broil for 2 to 3 minutes, or until the breadcrumbs are golden and crispy.
In your Larder & Vine Skillet or Braiser, heat the olive oil over medium heat. Once hot, scoop about ¼ cup of batter for each fritter, flattening it gently into a pancake shape.
