Recipe Ingredients
2lb zucchini
1 ½ teaspoon salt, divided
2 eggs, beaten
½ cup chopped green onions
¾ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon ground black pepper
2 tablespoons olive oil
Sour cream for dipping
Recipe Directions
1. Cut off the ends of zucchini, then grate zucchini and add to a medium mixing bowl. Add 1 teaspoon of salt to the zucchini and set aside for about 10 minutes.
2. After the 10 minutes are up, grab a large mixing bowl and set it next to the bowl with zucchini. Squeeze as much liquid as you can out of the zucchini and into the same medium mixing bowl. Place dry zucchini in the new large mixing bowl.
3. Once all liquid has been squeezed out, add green onions and eggs to the large zucchini bowl.
4. In a small mixing bowl, add flour, baking powder, remaining salt, and black pepper. Mix until well combined, then add to the zucchini mixture.
5. In your Larder & Vine Skillet or Braiser, heat olive oil over medium heat. Once oil is hot, add a ¼ cup scoop of batter at a time. Flatten into a pancake shape and let cook for about 5 minutes on each side or until golden.
6. Reduce or increase heat and cooking time as needed, then serve with sour cream and enjoy!
