Recipe Ingredients

  • 2lb zucchini
  • 1 ½ teaspoon salt, divided
  • 2 eggs, beaten
  • ½ cup chopped green onions
  • ¾ cup all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon ground black pepper

  • 2 tablespoons olive oil

  • Sour cream for dipping

Recipe Directions



1. Grate & Salt the Zucchini

Cut off the ends of the zucchini. Grate the zucchini and place it in a medium mixing bowl. Add 1 teaspoon of the salt and let it rest for about 10 minutes.




2. Drain & Squeeze Out Liquid

After the resting time, use your hands (or a towel) to squeeze as much moisture as you can from the grated zucchini. Transfer the dry zucchini solids to a larger mixing bowl, discarding or reserving the liquid.




3. Combine with Eggs & Onions

To the bowl with the drained zucchini, add the chopped green onions and the beaten eggs. Mix gently to combine.




4. Prepare the Dry Mix

In a separate small bowl, whisk together the flour, baking powder, the remaining salt, and black pepper.




5. Prepare the Dry Mix

Add the flour mixture into the zucchini–egg mixture, stirring until everything is evenly combined.




6. Heat the Pan & Form Fritters

In your Larder & Vine Skillet or Braiser, heat the olive oil over medium heat. Once hot, scoop about ¼ cup of batter for each fritter, flattening it gently into a pancake shape.




7. Fry Until Golden

Cook the fritters for about 5 minutes on each side (or as needed), until golden brown. Adjust the heat to avoid burning or undercooking.




8. Serve with Dipping Sauce

Remove the cooked fritters to a plate (you can line it with paper towels). Serve warm with sour cream for dipping.
